The core principle involves using vacuum pumps to extract air from packaging bags, reducing oxygen concentration below 0.5% to disrupt the survival environment of aerobic microorganisms. Experimental data indicates that when oxygen concentration is ≤1%, microbial reproduction rates decrease by 90%; at concentrations ≤0.5%, most aerobic bacteria cease activity. Furthermore, vacuum packaging prevents oxidation of unsaturated fatty acids in food, reduces vitamin loss, and preserves product colour, aroma, and flavour.

Some high-end equipment also supports the injection of inert gases such as nitrogen or carbon dioxide to create a modified atmosphere preservation environment. For instance, nitrogen inhibits mould growth, while carbon dioxide slows respiration in fruits and vegetables, extending shelf life. This ‘vacuum + gas flushing’ composite approach is particularly suited for packaging crispy foods (e.g., potato crisps), easily deformed items (e.g., shredded meat), and high-value products (e.g., coffee beans).

Testing and Validation: Following sample production, functional tests (e.g., vacuum level, seal strength) and endurance tests (e.g., 72-hour continuous operation) are conducted to ensure equipment stability.
